Hida beef is the pride of Gifu Prefecture. The most attractive point of Hida beef is its fine and beautiful marbling and soft, melt-in-your-mouth texture.
At our restaurant, we offer two ways to cook Hida beef to give you the most luxurious taste: shabu-shabu and charcoal-grilled.
In shabu-shabu, the meat is quickly dipped in kombu dashi (kelp broth) to remove excess fat and bring out the best flavor. It goes well with vegetables and is served with ponzu (Japanese sauce) or sesame sauce.
On the other hand, the charcoal grill allows you to directly taste the fragrant aroma and concentrated flavor of the meat. We have devised multiple seasonings such as salt, wasabi, and red miso sauce so that you will never get tired of enjoying them.
